Are we really authentic? Claiming EVOO

Did you know that many restaurants in Spain do not cook with Extra Virgin Olive Oil (EVOO). Could it be a matter of price or gastronomic culture? EVOO is the heritage of our kitchens, it is not just another ingredient. It is a super healthy food and one of the most studied in the world. Spanish olive oil production represents 60% of the European Union’s production and 45% of the world’s. We all know the benefits of EVOO, we know them, but…do we use it enough?
